02d5a5a342 Add Postmark test command for container health checks 
Support docker exec and a secured /test-email endpoint to verify email
delivery before wiring up the BTCPay webhook.

118b596631 Use Gitea registry image with env-based configuration 
Replace local build with configurable registry image defaults and document
settings in .env.example for deployers.
